fillet out the breasts
cut out the silverskin
remove shot and damaged sections
give each breast a few whacks with a mallet to flatten
marinate in Italian salad dressing or equal parts A-1 sauce, Worcestershire sauce and oil
grill over hot coals until it is rare but warm in the middle, which will take just a few minutes on each side
slice thin like London broil
