Grilled Goose Breasts

  • fillet out the breasts

  • cut out the silverskin

  • remove shot and damaged sections

  • give each breast a few whacks with a mallet to flatten

  • marinate in Italian salad dressing or equal parts A-1 sauce, Worcestershire sauce and oil

  • grill over hot coals until it is rare but warm in the middle, which will take just a few minutes on each side

  • slice thin like London broil
